Dandelion Salad with Warm Bacon Mushroom Dressing

 

Ingredients

 4 slices of bacon
 

1 tbsp olive oil

 2 cups mushrooms sliced
 1 garlic shoot, thinly sliced
 

2 tbsp red wine vinegar

 1 tsp mustard
 

1/4 tsp pepper

5 cups dandelion greens cut in 2" lengths
4 fried eggs

In a skillet, cook bacon over medium - high heat till crisp. Drain on a towel.Reserve 2tbsp of the fat. Chop in bite sized pieces. In the same skillet, heat reserved bacon fat and oil, over medium heat and cook mushrooms and garlic shoots till tender and golden , about 6 minutes. Remove from heat let stand for 1 minute. whisk in vinegar, mustard and pepper. Pour over Dandelion greens in the bowl and add bacon.
